☆  TASTES LIKE: The leaves are mild, sweet, earthy, and slightly bitter. The stalks look like celery with a sweet taste slighly similar to beets. ⁣

☆  WHERE TO BUY: It's lurking in the veggie aisle of your grocery store, trying its best to compete with neighbors kale and spinach.⁣

💡 IDEAS FOR USING CHARD:⁣
1. Add it to a green smoothie or juice.⁣
2. Sauté it in a pan with your healthy oil of choice, salt, pepper, garlic, onions, thyme, and nutmeg.⁣
3. The stems are edible too! Don't waste it! I chop mine up and Sauté them in olive oil, seasoned salt, pepper, fresh garlic, and herbs. I add it to stir fry dishes and veggie bowls.⁣
4. Use it in a salad as a lettuce alternative.⁣

☀️ With temperatures in the 60s here in GA, it  still doesn't feel quite like winter is coming (not complaining AT ALL). So I'm in a summery/fallish taco kind of mood. ⁣⁣⁣
⁣⁣⁣
📝 Sweet Potato & Corn Taco Recipe (13g Protein, makes 4 tacos):⁣⁣⁣
⁣⁣⁣
INGREDIENTS⁣⁣⁣
10 ¼ oz Sweet potatoes (chop it)⁣⁣⁣
2 ¼ oz Roasted red peppers (chop it)⁣⁣⁣
1 ½ oz Corn ⁣⁣⁣
4 whole White corn tortillas⁣⁣⁣
5 ¼ oz Cabbage⁣⁣⁣
2 oz Radishes (slice it)⁣⁣⁣
1 Red onion (chop it)⁣⁣⁣
3tbsp Cashew crema⁣⁣⁣
¼ oz Cilantro (chop it)⁣⁣⁣
1 whole Lime (zest it and quarter it)⁣⁣⁣
1 ½ tsp Smoky ancho-cumin seasoning⁣⁣⁣
3 ½ tbsp Red wine vinegar mixed with agave⁣⁣⁣
⁣⁣⁣
HOW TO MAKE⁣
1.) Make the Pickling Liquid & Pickled Onion: Boil red wine w/ agave and ¼ cup water for 1 minute. Place onion in a second small bowl. Pour pickling liquid into bowl with onion. Cover with plastic wrap. Let pickle 5-10 minutes.⁣⁣⁣
⁣
2.) Make the Filling: Saute sweet potato. Season with salt and half the cumin. Cover with lid and cook 12 minutes. Once done, add roasted red peppers and corn. Season with salt and remaining cumin. Cook 4 minutes.⁣⁣⁣
⁣
3.) Make the Sauce: Combine cashew crema, half the cilantro, and lime zest in a bowl. Squeeze juice from 1-2 lime wedges over bowl. Stir.⁣
⁣
4.) Make Slaw:  Mix cabbage, radishes, about half of the pickled onion, and 1-2 tablespoons of the pickling liquid in a medium bowl. Squeeze juice from 1-2 lime wedges over bowl. Drizzle with 1 tbsp olive oil. Salt and pepper to taste. Toss.⁣⁣⁣
⁣
5.) Make the Taco: Sprinkle tortillas with water, wrap in foil, and warm in oven for 6 minutes. Divide tortillas between plates. Top with sweet potato filling, pickled onion, and some slaw. Drizzle with cilantro-lime crema sauce and sprinkle with remaining cilantro. Serve remaining slaw on the side. ⁣⁣⁣

⏰ My biggest struggle a few months ago was productivity. Instead of making it a #NewYearNewGoals resolution, I decided to tackle it right then and there.⁣
⁣
❗️When I sat down to determine the root of the problem, I uncovered more problems:⁣
1. Why wasn't I getting enough done? Because I was procrastinating. ⁣
2. Why was I procrastinating? Because I was overwhelmed. ⁣
3. Why was I overwhelmed? Because I wasn't managing my time properly. ⁣
4. Why wasn't I managing my time properly? Because I was sleeping in.⁣
5. Why was I sleeping in? Because I believed I wasn't a morning person.⁣
⁣
And boom. Just like that, I realized all my problems stemmed from that mindset.⁣
⁣
☀️ I never thought I could become a morning person. It just wasn't for my Type B personality, I'd tell myself. For years, the only thing that could get me up early was to capture a sunrise like this for the gram. Thassit.⁣
⁣
🙅🏽‍♀️ But that's the problem with many of us isn't it? We become a victim of our own limiting beliefs. So I stopped limiting myself to the version of myself I wrongly believed to be true. ⁣
⁣
📝 I wrote out my ideal daily schedule and day by day, I worked at turning it into a routine. I didn't try to make a ton of changes at once, but instead made gradual improvements until it became normal. I started by working out every day. Then added 2 liters of water. Then 3 liters. Then a gallon. Then 5 minutes of meditation. Then 10 minutes of Spanish lessons. So on and so forth. Now, waking up at 5am and tackling my daily routine comes as naturally to me as breathing. ⁣
⁣
😌 Growth takes time! When you apprach it with an instant gratification mindset, it doesn't last. Make one small change today and work on that. Once that becomes consistent, throw another change into the mix. When your goal transforms into a habit, you'll never have to stress again about keeping it up.⁣

💆🏽‍♀️ 30s me cares about looking good AND feeling good! When I started approaching fitness as a lifestyle rather than a temporary means to an end, everything changed. Often times, all it takes is a tiny tweak in our way of thinking to get the results we want in life.⁣
⁣
🏋🏽‍♀️ Working out isn’t a chore for me anymore—it’s something I look forward to everyday. It’s what gets me out of bed at 5am so I can kickstart my day early and get more done. It has become a natural part of my routine and plays an essential role in my productivity levels. ⁣
⁣
💤 When I skip working out, I sleep in. When I sleep in, my whole day gets thrown off. When my day gets thrown off, it affects my health goals! I don’t drink my gallon of water, get my desired amount of healthy protein-packed vegan meals in, do my brain exercises, take my Spanish lessons, find time to mediate, or get all my work tasks done (which leads to that unhealthy feeling of overwhelm). So at the end of the day (literally), it doesn’t just impact my health in the traditional sense, but in unconventional ways too.⁣
⁣
🧘🏽‍♀️ Love the skin you’re in, no matter what your body goals are and stay focused on feeling great. I feel healthy, strong, and confident. When you feel good, it’ll show in everything you do.⁣

🥗 One thing I've noticed since I started making vegan dishes is that I constantly taste new fruits, vegetables, herbs and spices I never had in the past. The food I eat is more diverse than it's ever been. People ask me what vegans eat, and to be honest, a lot!⁣

🍉 So today I'm sharing my latest culinary obsession: figs. ⁣

FIG FACTS:⁣
⁣
☆  HOW TO EAT: Figs can be eaten raw, grilled, roasted, or dried.⁣
⁣
☆ TASTES LIKE: It has a subtle honey-like flavor with a hint of berry. And they're so pretty on the inside! They look like mini watermelons.⁣
⁣
☆ GOOD SOURCE OF: Vitamin K, potassium, calcium, magnesium, fiber, alkaloids, triterpenoids, vitamin C, and flavonoids.⁣
⁣
☆ HELPS FIGHT: Oxidative stress, constipation and lowers the risk of chronic diseases.⁣

♻️ I think one of the biggest takeaways is that sustainability isn't a trend or a buzzword. The Home Depot, for example, has been working diligently behind the scenes on their Eco Options program to make sure the products you buy are earth friendly and that they are reducing their carbon footprint along the way. They have been at this for YEARS and don't do it for recognition. They do it because they believe in it.⁣⁣⁣

🗣 Like President Obama said in his talk, "it doesn't matter what you say you believe - if you're not spending your money or the time or your energy on that thing, you don't really believe it."⁣⁣⁣

💁🏽‍♀️ Sometimes we say we believe in something, but our actions don't line up with what we say. It happens. But we can change that. If you talk about it, be about it! 👏🏽⁣⁣⁣
