1. Mix dry ingredients: 
- 1/2 cup whole wheat flour
- 1/2 tablespoon baking powder
- Pinch of salt

2. Add wet ingredients and stir:
- 1/2 cup non dairy milk
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon maple syrup
- 1 teaspoon vanilla

3. Stir in 1/2 cup strawberries and set batter aside for 10 mins to thicken.

4. Make baby sized round pancakes by pouring in a little bit of batter into a heated, oiled pan at your desired size. Flip when you see the batter bubbling up and let cook on the other side until done.

This is what a full day of eating looks like for a plant-based vegan toddler:

MENU:

✨Breakfast: Coconut yogurt w/ hemp hearts and strawberry lemon pancakes

✨ Morning snack: Sunflower butter crackers and raspberry chia applesauce

✨ Lunch: Spicy curry tofu, rice, and oranges

✨ Afternoon snack: Peanut butter cacao bliss balls (will be in my cookbook!)

✨ Dinner: Corn and potato chowder and baked croutons

✨ Beverage: 6oz pea milk, 6oz soy milk, and lots of water

✨ Supplement FAQs: Liquid multivitamin w/ B12, D3, iron, etc + an algal oil drop with Omega DHA & EPA.

Ps. Our breastfeeding journey has come to an end 🥰 We made it to two years!

I swore up and down I’d never be a mom. Lo and behold I married someone whose biggest dream was to be a dad (he wanted 5 kids 😵‍💫). Seemed like a risky move for a kid-obsessed guy to marry an anti-kid woman, but he did it anyway betting on the chance I’d change my mind.

To his relief, and to my *immense* surprise, I did in fact change my mind. And boom. Beyond was born.

I went from being a woman who was passionately against having children, to becoming a boy mom utterly obsessed with her child.

Then I went from being a mom passionately determined to be one and done, to becoming a mom with another on the way.

At first I simply couldn’t see myself sharing my heart with another child when my heart was already bursting with so much love for my first. I loved our family dynamic. Why take a gamble and introduce another? Nah. #NoNewFriends I said 🙅🏽‍♀️

And then it happened. Out of the blue. A change of heart, yet again (story of my life). For whatever reason, I suddenly melted at the sweet vision of Beyond as a big brother and my husband and me as the parents of two. Old me would have gagged at the thought.

So here we are, ready to take on the challenge of raising not one, but two whole human beings. And I can’t wait to see how they each light up the world in their own unique ways. 🥰

If you’ve been wondering why I haven’t posted as much the last few months, it’s because I took a break during my first trimester with Beyond to honor my body, and I decided to do the same for this pregnancy. Glad I did that because I ended up being exhausted and nauseous every day. But finally feeling like myself again and we’re back in action now ✨✨

Vegan Toddler Reviews: Hart House! This was Beyond Vegan Toddler Reviews: Hart House! This was Beyond’s first time experiencing fast food. We went to @myharthouse, Kevin Hart’s vegan fast food chain in LA.

Not only is it vegan, the food also has no cholesterol, no hormones, no artificial colors, no preservatives, no high fructose corn syrup, and no transfat.

My husband and I got the Crispy Chick’n sandwiches and milkshakes which were absolutely delightful.

Beyond got some nuggets, tots, and fries. Let’s start with the fries. He 100% enjoyed these. He even tried the dipping sauce, but I think he preferred it plain. Then I broke apart the nuggets for him and wasn’t sure if he’d go for it, but he did and seemed to like it. For a beverage, he brought his own water bottle. Lastly were the tots, which I suspect were his favorite.

Also side note I love that they have recycle and compost bins. Much respect for that!

In this episode of their What 3 Vegans Eat in a Day series, 3 vegans of different ages walk you through what they eat in a day, and Beyond got to represent for the vegan babies. The video is filled with fun recipe ideas for vegans of all ages.

What warmed my heart the most were all the supportive comments from people whose perspectives on vegan babies were challenged 🥰

Buzzfeed and Goodful essentially gave me the opportunity to help normalize vegan kids and show the world that vegan lifestyles can work for people at all stages in life. So special thank you to their producers and team!

After “adopting” rescued turkeys over the holidays, our family decided to tour @farmsanctuary where Beyond learned how animal-based food systems harm animals, the environment, public health, and even social justice. It was not only an educational opportunity for him, but also a chance to interact with rescued animals and develop his compassion. 

Introducing kids to individual farm animals is a simple but powerful way to teach empathy. Allowing them to learn an animal’s name, look into their eyes, and hear their stories helps open their minds to the consequences of our food system and who it directly impacts.

Raising kids to have an awareness of animal factory farming and helping them see the intelligent, social, and emotional nature of farm animals is also an important step in preparing young people for a changing planet and the inevitable future challenges their generation will face.

Here’s a holiday tradition you and your family c Here’s a holiday tradition you and your family can implement - stock a community fridge with vegan food (you can do this any day of the year though)! I would have brought Beyond with me, but this Christmas weekend has been egregiously cold. So I left him home to stay warm with daddy.

Community fridges are refrigerators placed in public spaces where anyone can fill them up with free food for anyone in the community who needs it.

I stocked up on plant-based options like fruits, veggies, plant-based meats, protein packed smoothies, cans of beans, vegetable stock, and nutritious grains. Everyone deserves access to healthy plant-based food.

A community fridge is essentially a grassroots effort to fight food injustice and food insecurity. @tryboredcow, a company I invested in earlier this year, sent me a whole case of vegan animal-free dairy milk to fill a local fridge in my area up with. They believe in directly giving to communities in need, so big shout out to them for teaching me about community fridges and inspiring me to do this!

To find a community fridge near you, try going online and entering your city + “community fridge” to see what pops up.

I found two in the Atlanta area:

1. @midtownfreefridge located at the back of Grace House on the Ga Tech campus, 182 5th St NW, Atlanta, GA 30313

2. @atlfreefridge located by North Decatur Presbyterian Church at 611 Medlock Rd, Decatur, GA 30033
